The process for making yellow tea is both time consuming and difficult. Though first created in the 1600s in the early Qing Dynasty, there are only three kinds of yellow tea that exist today from the Anhui Province. Though greatly appreciated long ago by the locals, yellow teas never had much broad appeal. That is changing.
Yellow Bud Yellow Tea (Huoshan Huangya Tea)
The finest unrolled full bud and two leaves are used to create this tea with a pale yellow liquor and a light, sweet taste reminiscent of spring. This tea nicely complements fruit dishes.
